What do you do when you’re too exhausted to cook?

So…think about this schedule: you teach a one-hour class of 33 high-school juniors, immediately followed by a one-hour faculty meeting in a different building, immediately followed by a four-hour class of 39 high-school sophomores in yet a third building!

And then you walk 30 minutes back to the garage and drive home through rush hour for what in fact really did turn out to be an hour (but with no rushing), and then do you want to cook dinner?

Of course not.

So we ordered delivery from Just Thai Kitchen. It turned out to be even more delicious than usual, and arrived in even less time than predicted. As usual, portions were very generous, providing several days’ worth of leftovers. Spring rolls, JTK wings, tom-yum soup with bean sprouts and extra shrimp, mango fried rice with bell pepper and extra mango, and my favorite spicy key-mao yaki udon with pork and no bell pepper! One very cool thing about Just Thai Kitchen is that practically everything is customizable in multiple ways: lots of choices, optional add-ons, and painless requests for omissions. Highly recommended!
